Tasting Notes
While typically a classic Island profile coffee similar to Kona and Jamaica Blue Mountain; Sweet and balanced and mild. Subjected to our champagne natural process and the flavor transforms in to a delightfully fruited cup. strawberry, milk chocolate and peach.

You probably didn't know Taiwan grows coffee. Actually they have a fairly long history of coffee cultivation there, but almost all of the coffee is consumed domestically. Typica trees were brought from Kona to Southern Taiwan more than 80 years ago while Taiwan was a colony of Japan. Plantations were established in the mountains of Pingtung and tended to by Indigenous Paiwan tribe farmers. Coffee production was abandoned for decades, but as Taiwan's café culture and coffee consumption grew over the past 2-3 decades, the old trees were used as parent material to establish new farms around Paiwan villages. One of these villages is called Taiwu. Our green buyer Miguel began working with growers from this village in 2010 to help improve quality. This past November Miguel returned to Taiwan to teach the producers our 'Champagne natural' process. Using wine yeast to ferment the cherries before a carefully controlled drying process this method produces enhanced acidity and a smoother mouthfeel along with complex fruit flavors.
