Background Info
This coffee is a rather different type of fermentation. with all our other coffees the fermentation occurred as fresh cherries, or pulped cherries. before drying.
This coffee is a green bean fermentation of dried, milled green coffee. It began life as a very traditional tasting Washed Kona Typica like our Kona Classic Medium. We fermented the green beans in a solution containing grape juice, wine yeasts, and Oak, essentially making a red wine around around the green beans. After fermentation the coffee is re-dried. In the process the green coffee loses about 25% of their weight.
*This coffee requires a much finer grind than other coffees or it will pour through too fast.*
