Description

* Direct Trade.

 The region is the oldest coffee growing area in Thailand, located in Chiang Mai province. Back in the late 1970's, the first Arabica trees that were part of the opium replacement program of the Thai King were tested here, and have never been replaced by higher-yield cultivars like in many other regions. As a result, heirloom varietals, particularly Typica, are still commonplace in many old farms. The coffee trees are 30-40 years old, older than the farmers! We want to demonstrate to the farmers that there are people who appreciate and are willing to pay more for the heirloom cultivar to compensate for the lower yield. Typica is now rare as farmers replaced it with higher yield and more rust resistant strands. The region grows coffee from 1000-1500 masl. But we only work with small holders whose farms are 1300+ and have almost all Typica."

Champagne Natural Process

This Limited Edition coffee is a special, Direct Trade collaboration with Beanspire Coffee in Thailand and coffee farmers Nui and Oi of Doi Saket. We had them produce a custom lot for us using our champagne natural process we developed in Hawaii. Fermenting the whole cherries under water with wine yeasts before drying on raised screens

What Is 100% Kona Coffee?

100% Kona coffee refers to coffee grown exclusively in the Kona district of Hawai‘i Island — a small, volcanic region
along the western slopes of Hualālai and Mauna Loa. The combination of mineral-rich soil, afternoon cloud cover, and gentle trade winds produces one of the world’s most distinctive coffee terroirs.

To be labeled “100% Kona Coffee,” every bean must be grown within the Kona district and meet strict Hawai‘i grading quality standards. Kona coffee can be made from different arabica varieties, but Kona Typica — a heirloom lineage — remains the region’s most common and traditional cultivar.
