Estates & Origin: The Highlands of Holualoa, Kona

High above the coast of Kona, in the volcanic uplands of Holualoa, small groves of Mokka trees produce one of the most distinctive coffees ever cultivated on Hawai‘i Island.
This diminutive variety—originally a natural mutation of Red Bourbon from Brazil—was first introduced to Hawai‘i in the early 2000s. Its tiny, lentil-sized beans and narrow leaves set it apart, and though yields are low, the cup reveals extraordinary depth and character.

Our Mokka is grown by Kona Farm Direct, using seed stock descended from the original trees planted at Hula Daddy Kona Coffee, where this variety first gained renown for its remarkable cup profile.

A beautifully complex and perfumed cup, expressing notes of rose, plumeria, coconut, vanilla, clove, lime, and milk chocolate.
The malolactic fermentation lends a creamy, wine-like texture—balancing bright tropical acidity with deep, velvety sweetness.
Elegant and full of nuance, this is Kona through the lens of modern enology — refined, sensual, and captivating.


Craft & Process: Malolactic Natural Fermentation

This season’s lot was crafted using our Malolactic Natural process, a dual fermentation that employs both selected wine yeasts and malolactic bacteria.
The result is a coffee of heightened aromatic complexity and tactile richness—vibrant acidity paired with a silken, creamy mouthfeel, reminiscent of a fine white Burgundy.

It’s the culmination of years of experimentation in collaboration with Kona Farm Direct, pushing the boundaries of fermentation science while honoring the heritage of the region.

What Is 100% Kona Coffee?

100% Kona coffee refers to coffee grown exclusively in the Kona district of Hawai‘i Island — a small, volcanic region
along the western slopes of Hualālai and Mauna Loa. The combination of mineral-rich soil, afternoon cloud cover, and gentle trade winds produces one of the world’s most distinctive coffee terroirs.

To be labeled “100% Kona Coffee,” every bean must be grown within the Kona district and meet strict Hawai‘i grading quality standards. Kona coffee can be made from different arabica varieties, but Kona Typica — a heirloom lineage — remains the region’s most common and traditional cultivar.
