Tasting Notes
Refreshingly fruity, with a vibrant acidity. Cherry, Orange, Mango, Pineapple.
"Richly fruit-toned, complex. Dried mango, cocoa nib, cascara (coffee cherry tea), lilac, cedar in aroma and cup. Bittersweet structure with winy acidity; satiny-smooth mouthfeel. Fruit-driven finish with a bittersweet undercurrent that lends complexity."
Background Info
For the 2021 Harvest season we set out to produce washed coffees that was distinctly fruity and complex. After several trials we found that by blending several batches fermented with different yeast strains, and for different amounts of time we were able create a taste profile reminiscent of a tropical fruit punch.
This coffee is a blend of fermentation of Red Catuai cherries sourced from Miranda Farms at 2000-2100ft and Red Bourbon from JN Farms at 1900ft in the Ka‘ū district.
This coffee has proved very popular at our Hilo, Hawaii retail shop and is refreshing hot or cold.
