Background Info

Mama Cata Estate is a farm in Boquete, Panama first established in and currently owned by the Garrido Family since 1997. They have many varieties growing like Geisha/Gesha and their award winning Mokkita. They are always testing and adding new varieties and one of these is H1 Centroamericano.

H1 CentroAmericano is the first release of a newer generation of F1 hybrid varieties That began to be distributed to growers about a decade ago. This variety is a cross of Rume Sudan, a disease resistant plant from the Bomb Plateau of South Sudan and Sarchimor T.5296. Itself a hybrid of the dwarf Villa Sarchi bourbon mutant and HDT (Hybrid de Timor) - A hybrid of Arabica and Robusta species that is the source of disease resistance for most modern coffee varieties. 

It is a very high yielding variety known for good, but not generally excellent cup quality. Jose David Garrido has been working for years to find a processing method that does make this variety great. ASD -Anaerobic Slow Dry has been his answer. The cherries are fermented in air-tight containers for several days and then dried slowly for more than month on raised screens.
