White grape and vanilla in the aroma. The cup has a pleasing honey like sweetness, along with notes of dried plum and citrus.

Huai Mae Liam is a coffee producing village whose coffee has never been exported before this year. This village is just a short distance from Doi Pangkhon village where we have been purchasing from for many years. Growers from one village often live in one village but also have farms in the area around the other.

This is a single farm lot from grower Asor Merlaeku, the second oldest of 5 brothers who operate the mill that produces our Doi Pangkhon coffees. He is one of the most sophisticated farmers we have encountered in Thailand, and this exemplary coffee showcases his skill.

 

White Honey Process

The coffee is partially fermented, meaning that he intentionally took the coffee out the fermentation tank before the fermentation is finished. This left some mucilage on the parchment, resulting in a brightness close to washed coffee, but with the smoothness and sweetness of a honey.

along the western slopes of Hualālai and Mauna Loa. The combination of mineral-rich soil, afternoon cloud cover, and gentle trade winds produces one of the world’s most distinctive coffee terroirs.

To be labeled “100% Kona Coffee,” every bean must be grown within the Kona district and meet strict Hawai‘i grading quality standards. Kona coffee can be made from different arabica varieties, but Kona Typica — a heirloom lineage — remains the region’s most common and traditional cultivar.
