The rare Rume Sudan variety, originally from East Africa, finds new expression here, nurtured in soils rich with minerals and cooled by mountain breezes.

Character & Style: Bright, Sweet, and Complex

Tasting Notes: Hibiscus and grapefruit in the aroma lead into a cup that is both bright and sweet, with layers of green apple, cocoa nib, and dried berries.

Process Notes: Lactic Natural Precision

This lot underwent an anaerobic natural process, where whole cherries were sealed and fermented in oxygen-free tanks with lactic acid bacteria added before being carefully dried. The result: heightened aromatics, layered fruit tones, and a sparkling, wine-like acidity.
