A rare variety cultivated in the highlands of Guatemala, expressing both elegance and intensity through careful fermentation and small-batch roasting.
From the renowned Coffea Diversa project, this Rume Sudan lot is grown in the volcanic highlands of Guatemala — a terroir known for clarity and vibrant structure. The rare Rume Sudan variety, originally from East Africa, finds new expression here, nurtured in soils rich with minerals and cooled by mountain breezes.
Tasting Notes: Hibiscus and grapefruit in the aroma lead into a cup that is both bright and sweet, with layers of green apple, cocoa nib, and dried berries.
Roast Level: Light roast, emphasizing clarity and lively acidity.
Harvest: Winter 2025
This lot underwent an anaerobic natural process, where whole cherries were sealed and fermented in oxygen-free tanks with lactic acid bacteria added before being carefully dried. The result: heightened aromatics, layered fruit tones, and a sparkling, wine-like acidity.
