Hawaiian coffees benefit from volcanic soils, high elevation microclimates, and year-round cultivation conditions. Each district — Kona, Ka‘ū, Puna, Hāmākua — produces distinct flavor profiles shaped by rainfall, elevation, and processing traditions.
Kona coffee comes specifically from the North and South Kona districts on the Big Island and are known for a clean, sweet , and balanced cup.
“Hawaiian coffee” refers to all coffees grown across the state, including Ka‘ū, Puna, and Hāmākua districts of the Big Island, as well as the other islands: Maui, O‘ahu, Kauai. Each offering unique varieties and cup profiles.
Kona coffee is grown on small family farms with high labor costs, limited land, and hand-harvested production. Strict grading and limited annual yield make it one of the most sought-after coffees in the world.
While Typica dominates Kona production, a handful of farms also grow Bourbon, Maragogype, SL34, and rare Ethiopian heirloom varieties like Geisha. Ka‘ū and Puna grow mostly Red Catuai, Typica, and Bourbon. Recent plantings on farms include Pacamara, Geisha, and Disease resistent hybrids such as Lempira, Castillo, and Tabi.
Most Hawaiian coffee is traditionally washed using demucilaging equipment or simple overnight fermentation, but you’ll also find natural, honey, anaerobic, and yeast-inoculated fermentations — methods we have helped pioneer in Hawai‘i with growers in Kona & Ka‘ū we partner with.
All Hawaiian coffees are carefully roasted at our Hilo, Hawai‘i roastery, designed to highlight balance, sweetness, and each district’s terroir.
