Description

If you haven't yet had an excellent coffee - or any coffee - from the Philippines, start here. Quality Arabica coffee from the region had been difficult to come by until recently because 90% of the country's production is commercial grade Robusta, and most of it is locally consumed. Yet the third wave cafe movement has been growing rapidly over the past 5 years, as has their export of quality Arabica beans. 

 

Gloria Estate is a large farm at 900-1100m in the hills below the Kitanglad Mountain range on Mindanao, The Philippines southern most island. The largest Pineapple farms in the world are located nearby and the landscape looks quite similar the to western Oahu, Hawaii where pineapples and coffee are grown. 

Miguel visited the farm during the harvest season in 2018. Their quality has steadily improved since then, aided by the use of yeasts in fermentation. Coffee is planted under the shade of Rainbow Eucalyptus trees. They grow several varieties on the farm: Catimor, Typica, and Orange Bourbon. We selected the Catimor for its lively citric-like acidity. Roasted darker it maintains these qualities and also has pleasing roast flavors of toasted marshmallow, mesquite, and a brown sugar like sweetness. Also great as an espresso for milk based drinks.

along the western slopes of Hualālai and Mauna Loa. The combination of mineral-rich soil, afternoon cloud cover, and gentle trade winds produces one of the world’s most distinctive coffee terroirs.

To be labeled “100% Kona Coffee,” every bean must be grown within the Kona district and meet strict Hawai‘i grading quality standards. Kona coffee can be made from different arabica varieties, but Kona Typica — a heirloom lineage — remains the region’s most common and traditional cultivar.
