Tasting Notes

Soft and sweet. Toasted coconut and hazelnut with hint of grapefruit and lime. Exceptionally smooth in the finish.

This standard Non Peaberry version of this coffee was awarded a score of 94 points by Coffee Review:

"Deep-toned, chocolaty and rich. Dark chocolate, strawberry guava, hazelnut butter, sandalwood, ginger blossom in aroma and cup. Sweet-toned structure with round, engaging acidity; full, syrupy mouthfeel. Crisply sweet, long finish with notes of dark chocolate, hazelnut and sandalwood."

"A superb example of the classic Kona cup: exceptionally sweet, deeply nut-toned, and vivified by spice-toned floral and fruit notes."

The most exemplary expression of the traditional Kona cup. We took the ripe st selected cherries from the Peak of the Harvest in September-October 2020 to be processed at a neighboring mill using the method that is most common in Kona. Mechanically scrubbing off most of the fruit and then over-night fermentation without water to remove the remaining fruit followed by sun drying on covered rooftop drying patios known as Hoshidana.

Peaberries come from cherries that produce only one rounded seed instead of 2 flat faced seeds. Their round shape tends to help produce a more even roast and we find them often to display slightly increased acidity and aroma compared to standard flat beans from the same coffee. They compose only a tiny part of the production. From our Kona classic only 4% of the harvest was Peaberry.

along the western slopes of Hualālai and Mauna Loa. The combination of mineral-rich soil, afternoon cloud cover, and gentle trade winds produces one of the world’s most distinctive coffee terroirs.

To be labeled “100% Kona Coffee,” every bean must be grown within the Kona district and meet strict Hawai‘i grading quality standards. Kona coffee can be made from different arabica varieties, but Kona Typica — a heirloom lineage — remains the region’s most common and traditional cultivar.
