In \u003cstrong\u003e1948\u003c\/strong\u003e, \u003cstrong\u003eVidal Suárez\u003c\/strong\u003e and his wife \u003cstrong\u003eEira Gutiérrez de Suárez\u003c\/strong\u003e started a new generation of growers in El Salto. They worked the land by hand, and their first plantation, \u003cstrong\u003eCamiseta\u003c\/strong\u003e, was planted with Typica. Ripe cherries are hand-picked, pulped, fermented to remove the mucilage, washed clean, and then slowly sun-dried on raised beds until the moisture is stable.\u003c\/p\u003e\n\u003cp\u003eThis keeps processing flavors out of the way, so the variety's floral aromatics, refined acidity and tea-like clarity come through, along with the character of the land it grew on. Brew at 200–205°F with a medium-fine grind, and serve in a tulip-shaped cup or wine glass.
