In December 2023, we featured their Kona Cupping competition-winning Extra Fancy. This peaberry selection is another offering from the same harvest. Rather than the largest beans – Extra Fancy grade – these are the 'peaberries': small, rounded seeds that form when only one seed develops inside the cherry, as opposed to the usual two. Peaberries usually comprise only 3-7% of the harvest.\u003c\/p\u003e\n\u003cp\u003eThis coffee was processed as a traditional washed coffee. Cherries are pulped on the evening of harvest, fermented overnight with a little water added to the tank, and then dried in a mechanical drying machine.\u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"UTF-8\"\u003e\u003cspan\u003eCompared to the Extra Fancy, this coffee has slightly more acidity.
