Coming off of a 27-year career as a Police Sergeant with Hawaii County Police Department, Cory and Connie have expanded from their initial 5-acre farm to managing 33 acres in Ka’ū. The Pacamara comes from their field  at 1400-1600ft in the Cloud Rest region of Ka‘ū. Here they grow Red Catuai, Red Bourbon, Yellow Bourbon, and Pacamara varieties. The Pacamara is harvested separately. in 2023 they entered the Pacamara coffee to the Best of Ka’ū cupping competition and took  6th place. \u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe processing is simple and classic. Cherries are brought down from the farm in the afternoon, promptly pulped and fermented in open tanks. rinsed the following morning and put to pre-dry on raised screens and then finished in Penagos drying machines.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003ePacamara Variety\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003ePacamara is a hybrid of the compact variety Pacas, and the large beaned Maragogype variety. It shares much in common with it's Maragogype parent, including large bean size and producing a more powerful cup often with notes of citrus and peach.
