We took the ripe st selected cherries from the Peak of the Harvest in September-October 2020 to be processed at a neighboring mill using the method that is most common in Kona. Mechanically scrubbing off most of the fruit and then over-night fermentation without water to remove the remaining fruit followed by sun drying on covered rooftop drying patios known as Hoshidana.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003ePeaberries come from cherries that produce only one rounded seed instead of 2 flat faced seeds. Their round shape tends to help produce a more even roast and we find them often to display slightly increased acidity and aroma compared to standard flat beans from the same coffee. They compose only a tiny part of the production.
