The coffee is pulped and fermented, then rinsed and the coffee then soaked underwater for extended time before proceeding to drying. In Kenya this soaking step is often used to hold the coffee in peak season while waiting for more drying space to become available. And unintentionally may help to contribute to the excellent quality their coffees are known for.\u003c\/p\u003e\n\u003cp\u003eThis results are an exceptionally clean and smooth coffee.
