We asked her if should would be able to bring in some bags from Tam and Pat for us with her other coffees and she was happy to arrange it. After harvesting, the cherries are piled onto a motor bike, carried down from their farm at 1600m on Langbiang Mountain to their village and then fermented in buckets under water for 24 hours and washed. He distributed shade tree seedlings along with seeds of Ethiopian heirloom coffee varieties like Wolisho and Kurume to 150 members of the community that worked to replant the forest. These growers are paid a premium to bring only the ripest cherries to Suke Quto farm for processing. Transitioning the region from opium to coffee has been several decades in the making - a modern story in itself of sustainability, uprising, and revival. \u003cbr\u003e \u003cbr\u003eIn 2013, Miguel was hired as a consultant by a local export company in Northern Thailand to assess the quality potential of the region’s coffees. During the trip he stumbled onto Doi Pangkhon and after cupping a few samples it was clear this region was already producing some impressive coffees.  While wandering the fields Miguel noted several excellent cultivars: Bourbon, Typica, Caturra and Catimor. \u003cbr\u003e\u003cbr\u003eThe growers, mostly in their 20's and 30's inherited the farms from their grandparents - former opium producers - and now run the estates with assistance from their families. Similar to the monsooned coffees of India, they seek to recreate the flavors of coffees from the Far East transported to Europe by sailing ships in a bygone era. The months-long voyage across warm tropical waters would alter the flavor and appearance of the coffees.\u003c\/p\u003e\n\u003cp\u003eThese aged Indonesian coffees are almost always made from \u003ca href=\"https:\/\/paradiseroasters.com\/blogs\/news\/what-is-giling-basah\" data-mce-fragment=\"1\" data-mce-href=\"https:\/\/paradiseroasters.com\/blogs\/news\/what-is-giling-basah\"\u003ewet-hulled coffees\u003c\/a\u003e. These washed process coffees have the parchment removed at 25-30% moisture content and are partially dried as green coffee, instead of being dried down to 10-12% in parchment. The coffees are aged in warehouses, most often in Singapore, for 2-5 years, being mixed occasionally to ensure the aging process is homogeneous. Conilon is technically not robusta, though generally lumped in with it. Both are of the species Coffea Canephora but from different genetic groups. Conilon being from group SG1. It is mainly grown in Brazil, and from Brazil it was brought to Ecuador. The beans are smaller and pointed, looking very different from most robusta coffees. We find the mouthfeel to be leaner, acidity slightly more prominant and often aromas of aromatic woods and spices.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eThis lot was produced by grower Mauricio Hidalgo in the coastal Guayas province of Ecuador. Volcano Village, atop Kilauea volcano, is roughly 3000 feet above sea level -- twice the altitude of most Kona farms -- surrounded by native 'ohi'a trees, endemic birds, and generally overcast, cool weather. Finding coffee grown this high up Kīlauea volcano is unusual and mostly considered experimental, which is one reason we were excited to meet Jim Chestnut and taste his Kilauea volcano-grown coffee. \u003c\/p\u003e\n\u003cp\u003eJim and Edna's farm is just 25 miles up the mountain from Paradise's Hawaii roasting facility in Hilo. We have continued to refine and evolve this process every season through continuous experimentation and cupping.\u003c\/p\u003e\n\u003cp\u003eThe process starts with sanitation of the cherries and removing any floating low density fruit. The cherries are then placed in a Bioreactor, covered with water and inoculated with selected wine yeast strains. After several days of fermentation the sugars in the fruit have been consumed and converted to alcohols, acids, and CO2, and also aromatic Esters which can give aromas reminiscent of fruits and flowers. At the end of fermentation the cherries are no longer sweet, but crisp and tart and effervescent from the CO2, tasting like champagne.\u003c\/p\u003e\n\u003cp\u003eThe Cherries are then laid to dry on trays in a specially built dehumidified drying building that rapidly removes the moisture from the fruit at low temperatures. After a couple days, the mucilage coating the parchment oxidizes to a reddish brown color and tastes a little tangy. One of the farms he frequently visited was Zhou Zhu Yuan farm high in the mountains of Alishan, a region traditionally famous for Tea production. At the farm two varieties were growing.
