Transitioning the region from opium to coffee has been several decades in the making - a modern story in itself of sustainability, uprising, and revival. \u003cbr\u003e \u003cbr\u003eIn 2013, Miguel was hired as a consultant by a local export company in Northern Thailand to assess the quality potential of the region’s coffees. During the trip he stumbled onto Doi Pangkhon and after cupping a few samples it was clear this region was already producing some impressive coffees.  While wandering the fields Miguel noted several excellent cultivars: Bourbon, Typica, Caturra and Catimor. \u003cbr\u003e\u003cbr\u003eThe growers, mostly in their 20's and 30's inherited the farms from their grandparents - former opium producers - and now run the estates with assistance from their families. Traditionally, we have focused on a washed process. The specialty movement has brought the knowledge of honey and natural processing during the last couple of years. This year we experimented with the Anaerobic method, which, means fermenting the coffee first  in sealed containers, This method maintains the brightness of a traditional washed coffee, but also brings out the sweetness and the body typically found in a natural processed coffee. We performed this experimentation with the farmers Nui and Oi Jaisookseern farm in Doi Saket, Chiang Mai. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe region is the oldest coffee growing area in Thailand, located in Chiang Mai province. Back in the late 1970's, the first Arabica trees that were part of the opiumreplacement program of the Thai King were tested here, and have never been replaced by higher-yield cultivars like in many other regions. As a result, heirloom varietals, particularly Typica, are still commonplace in many old farms. The coffee trees are 30-40 years old, older than the farmers! We want to demonstrate to the farmers that there are people who appreciate and are willing to pay more for the heirloom cultivar to compensate for the lower yield. Typica is now rare as farmers replaced it with higher yield and more rust resistant strands. The region grows coffee from 1000-1500 masl. This water also has KMS ( potassium metabisulfate) to disinfect the cherries. This helps them stay fresh during the resting time. The cherries are hung up in mesh sacks in the shade to rest for about 2-4 days depending on the temperature. Then they are dry pulped and set out to dry on shaded raised beds. After a couple days, the mucilage coating the parchment oxidizes to a reddish brown color and tastes a little tangy. This means that farmers strip-pick coffee that are full of underripe cherries and dry the coffee as natural process on dirt floors. Thailand produces around 25,000 tons of Robusta annually this way. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eDuring the visit, we met with a group of progressive farmers who have been trying to rely less on supplying their coffee to instant coffee factories. The group has been testing out washed processing on their Robusta and has been doing better since they embarked on their specialty robusta journey. The year we visited the group had just welcomed a veteran farmer, Panid Choosit, into their network. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003ePanid has been growing Robusta coffee for 20 years and, in the past, all 8 tons of his coffee went to instant coffee factories. His farm is at an elevation 525 meters  in Tha Sae, Chumphon Province. We worked with Panid during the visit to experiment with the fully washed method. We refined his process that saw the result improved significantly. Beanspire was able to offer a price that's double the typical Thai market rate of commercial grade Robusta coffee for these specialty prepared lots. However, after seeing the group and Beanspire's effort, the commercial grade buyers offered 50% higher market price for Robusta in the area. This reduced the incentive for some farmers to develop specialty grade Robusta. But Panid decided to continue to pursue this improvement anyway and out of 8 tons he switched 1 ton of his production to the specialty. The result is what you will taste in the cup. After working at an electronic parts factory in the city she decided to return home to Omkoi and try her hand at growing coffee. Beanspire’s co-founders, Fuadi Pitsuwan and Jane Kittiratanapaiboon, are part of the young generation moving the Thai coffee industry forward. Thailand is unique as a coffee producing country; the country’s specialty cafe and roaster scene is thriving, and domestic consumption demands regularly outpace the country’s production volume. Only around 5% of Thailand’s specialty coffee is exported each year, while the rest is consumed in country. This means that the coffees selected for export by the team at Beanspire are each chosen to share the work of Thai coffee producers with a global audience, providing a glimpse into the growing specialty coffee revolution happening in the country.\u003c\/p\u003e\n\u003cp\u003eBeanspire mill is one of the most advanced in Thailand, with a destoner, huller, and a gravity table for density sorting. Jane and Fuadi have built Beanspire to produce quality from the outset, passing all coffee through density and hand sorting multiple times to ensure quality and uniformity. Coffee is packed in triple layer bags for shipment: cotton bag as outer layer, High Density Polyethylene (HDPE) as middle layer, and GrainPro as inner layer. The HDPE bags help maintain moisture content, thus preserving quality for longer. Freshly harvested ripe coffee cherries are first floated to remove any potential defects before being pulped. The coffee is briefly fermented, Still retaining some mucilage during drying. A process this producer calls White Honey, similar to what some may also call 'Semi-washed'\u003c\/p\u003e\n\u003cp\u003eThe pulped coffee is then laid out in a thin layer on raised beds where it is dried for several days until it reaches 11% humidity. The temple is led by a monk, Luang Por Swai, who is a former engineer.  With a goal to help the neighboring community balance between their spiritual and economic aspects of life, Luang Por Swai, saw specialty robusta coffee as a potential source of increased income for the community. Traditionally, the community around the temple grows robusta to feed the industrial factories. But Luang Por Swai started this venture after having read and learn about specialty robusta from social media and other robusta growers' communities in Southern Thailand. It is a meticulously done black honey process where the monks applied the same high standards coffee processing methods we use in Arabica coffee processing to Robusta. Only fully ripe coffee cherries were picked then they were further sorted and pulped with as little water as possible to preserve the mucilage on the parchments.
