Costa Rica Coffea Diversa -Geisha Carbonic Maceration Natural
Gonzalo Hernandez likes to brag that he’s amassed the world’s largest private collection of coffees trees: more than two hundred species, botanical varieties, mutations and cultivars that grow on his exotic Costa Rican “coffee garden”, Coffea Diversa. His collection includes some of the rarest in the world -- coffees many have neither heard of nor tasted. This year is the first year he has started offering coffees using the carbonic maceration process. This method adapted from wine production involves fermenting the whole cherries in a sealed container flushed with Carbon Dioxide gas before drying the whole cherries as a natural.
Tasting Notes: Chamomile, Cherry, Bergamot, Nutmeg
