Sweet and spicy. Snickerdoodle cookies in the aroma. Sweet and chewy mouthfeel bursting with flavors of Apple Pie and Blackberries.
Background Info
This coffee is an anaerobic natural processed lot produced from cherry from small-holder farmers in Quindio, Colombia. A small region wedged in between Tolima to the East, and Valle del Cauca to the West. The farms are located at 1800-1900m. this area has a very ideal environment for coffee with rainfall around 2000mm/year and temperature range from 14-26C.
The harvest the cherries are fermented in a low oxygen environment for 40 hours and then sun dried. While the producer claims not to be adding anything to this coffee, we are skeptical. The taste is strongly and distinctly of cinnamon, something we have only ever encountered in coffees where cinnamon was added to the fermentation. It is very well integrated with the flavor and pairs well with the high sweetness and fruit notes of the coffee giving an over all impression of apple pie or Blackberry Mulled wine.
