This limited Taster's Set contains two micro-lot, direct trade coffees from Thailand; Deliciously sweet, big-bodied, and aromatic natural and honey coffees.
Thailand Doi Pangkhon Black Honey
Tasting notes: red grapes, berries, grapefruit, and chocolate.
This is what we call a "black honey micro-lot." The coffee cherries were pulped and dried on raised beds with a thick layer of the coffee's natural and sweet mucilage mostly intact. They're dried on raised beds for 21-25 days, raked regularly, and the combination of slow drying plus natural sugar attached to the drying parchment allows more sugar to penetrate green beans. This method produces coffees that are sweet and full-bodied.
The varietals are a mixture of Typica, Catuai, and Chiang Mai (with many unknowns as well). Chiang Mai is a local hybrid that is a cross between SL28 x Caturra x Hibrido de Timor.
Thailand Doi Saket Yellow Bourbon Natural
Tasting notes: pineapple, caramel, roasted cashew, and green apples.
Doi Saket is the oldest coffee growing area in Thailand, located in Chiang Mai province. Back in the late 1970's, the first Arabica trees were planted as part of the opium replacement program of the Thai King. They've never been replaced by higher-yield cultivars like in many other regions. As a result, heirloom varietals (mostly Typica) are still commonplace in many old farms - like Yellow Bourbon
