Background Info

Hacienda Denise was started by the Bustamante family in 1987 and named after their Daughter Denise, who now as an adult helps manage coffee operations. Originally the farm had livestock and cacao. After experimenting with robusta coffee they found it thrived in their rich Equatorial soils.

They are a cutting edge operation experimenting with dozens of robusta clones to find those with the best yield, cup and disease resistance characteristics for their growing area.

Quite uniquely most of their coffee is fermented using a pectin-reducing enzyme -Granozyme to accelerate the natural fermentation process.
