Tasting Notes

Delicate and complex aroma that suggests almond and citrus. In the cup, caramel and lemon. Vibrant acidity, with hints of granadilla as the cup cools.

Background Info

Finca El Paraiso is located in Gigante, Huila, Colombia and run by Ernedis Rodriguez, whom has been working with our friends at The Coffee Quest since 2016. The farm sits at an elevation of approximately 1,840 meters and consists of 14 Hectares in total, half in coffee and half in reserve. Of those 7 Hectares in coffee, approximately 75% is in Caturra, 10% in Castillo and 15% in exotic varietals (Sidra, Chiroso, and Java).

This lot is comprised of 100% Caturra. Ernedis is and has been a consistent grower, producing clean and sweet coffees, harvest after harvest.

The micro-climate the farm is in is very cool relative to some other farms in the region, and the beans are extremely dense making it more challenging to work with in both fermentation and roasting. This Season we encouraged The Coffee Quest and Ernedis to do some fermentation trials inoculated with yeasts. All showed interesting flavors of citrus and tropical fruits that aren't usually present in his coffee. This lot is a blend of all the trials, with the knowledge learned from these initial trials next season he well be able to refine this technique more for next season's harvest.

after manually floating cherries for 7 hectares of coffee, for the past for 5-10 years, late last year he was finally able to upgrade his processing infrastructure and now has a wet mill that auto-sorts and floats the cherries prior to de-pulping. This is a huge step and saves Ernedis an enormous amount of time and work, allowing him to better focus his attention on other areas of the business. Some ecological examples of this are a 3-step process for composting the cherry pulp and using an eco-washer to wash the coffee (these eco-washers use literally a fraction of the water to wash the coffees, compared to the traditional washing). A one-of-a-kind producer that we are thrilled to be able to work with! 


Ernedis also placed 3rd in annual Huila Mágico competition in 2021 and 7th place in 2022.
